Kenji, how’s your stay in the Philippines so far?
I missed the Philippines especially the food.
What food have you tried?
Oh, I like the chicken and pork in soy sauce?
I forgot the name.
Oh, that must be
ADOBO
.
ADOBO
:
"adobo"はフィリピン料理の一つで、肉と野菜を醤油や酢で味付けして炒めたもの。
Yah yah. I remember. A-DO-BO.
How do you cook that again?
That’s easy to cook.
You will need a pork, chicken, a soy sauce, pepper, a bit of vinegar, onions, garlic and
laurel
.
laurel
:
"laurel"は標準英語では「月桂樹」だが、フィリピン英語では「ベイリーフ」の意味。
Um, what’s laurel?
Oh, I mean bayleaf.
Oh. Simple ingredients.
If you want it sweet, put a little sugar.
Okay. How do I do it?
Okay, it’s like this. Saute the garlic, onion and ginger.
You have to wait until it turns brown. Then put altogether the meat, soy sauce, pepper, bayleaf, and then the vinegar.
Then add a cup of water and just let it boil until the meat is, ah, tender.
Oh, I get it. But how do I know if it’s done?
It should be tender at least, um, easy to bite.
And if I like it sweet?
That’s the time, ah, you put the sugar.
That’s quite easy. I’ll try it tonight.
You should invite me the next time you cook, ha?
Oh, sure I will.
I will try that one of these days.
